The Pitcairn Islands were established by the mutineers from the HMS Bounty and local Tahitians. It is a British Overseas Territory but is also constitutionally independent. It has only has about 50 inhabitants. No TV stations. No radio stations. But beautiful unspoiled flora and fauna. It is most associated with New Zealand and does use its currency. In the past English monarchs have been printed on its stamps and like other small islands, it will sometimes allow mints to make coins bearing their name and the image of Queen Elizabeth II. Often their coins will have images of local fish and flora.
